Make these easy Chicken Souvlaki Pitas if you're in the mood for Greek food but don't want to eat out. First, the chicken is marinated in a flavorful marinade made from fresh lemon juice, olive oil, garlic, and herbs. The chicken is baked and then served on pita bread, fresh lettuce, tomatoes, red onions, and a homemade tzatziki sauce. This homemade chicken souvlaki pita is the perfect way to satisfy your cravings for Greek food. Serve with Greek salad or our Crispy Roasted Potatoes

*Note: Soak your skewers in water for 30-45 minutes to prevent them from burning if you are using wooden skewers.*

Ingredients

Tzatziki Sauce:
  • 1/2 English Cucumber, grated 

     

  • 1 cup Plain Greek Yogurt
     

  • 1 clove Garlic, minced
     

  • Zest of 1 Lemon
     

  • 2 tablespoons Fresh Lemon Juice 
     

  • 2 tablespoons Fresh Dill, minced 
     

  • 1 tablespoon Fresh Chives, minced
     

  • 1/2 teaspoon Kosher Salt
     

  • 1/4 teaspoon Black Pepper

Chicken Souvlaki:
  • 1/2 cup Olive Oil

     

  • 3 tablespoons Red Wine Vinegar
     

  • Zest of 1 Lemon
     

  • Juice of 2 Lemons 
     

  • 4 Garlic cloves, minced 
     

  • 2 Shallots, minced
     

  • 3 tablespoons Fresh Dill Weed, minced 
     

  • 3 tablespoons Fresh Parsley, minced 
     

  • 1 teaspoon Dried Oregano
     

  • 1 teaspoon Dried Basil 
     

  • 1 teaspoon Fresh Thyme, minced 
     

  • 1 teaspoon Fresh Rosemary, minced
     

  • 1 1/2 teaspoons Kosher Salt 
     

  • 1/2 teaspoon Black Pepper
     

  • 4 boneless, skinless Chicken Breasts cut into 1-inch pieces

To Serve:
  • 6 warm Whole-Wheat Pita Bread 
     

  • 1 medium head of Romaine Lettuce, sliced
     

  • 1 large Tomato, sliced

  • 1/4 Red Onion, peeled, thinly sliced

Instructions

Tzatziki Sauce:

Place the cucumber into a fine mesh strainer and squeeze the excess moisture.

Place the cucumber into a bowl along with the remaining tzatziki sauce ingredients and stir until combined.

Cover the tzatziki sauce with plastic wrap and let it chill in the fridge for 1 hour.

Chicken Souvlaki:

Mix the olive oil, red wine vinegar, lemon zest and juice, garlic cloves, shallots, dill weed, parsley, oregano, basil, thyme, rosemary, kosher salt, and black pepper in a large bowl until it is combined.

Next, add the chicken breasts and toss to coat in the marinade. Let the chicken breasts marinate for 1 hour or overnight.

Soak the skewers in water and preheat the oven to 375 °F.

Remove the chicken breasts from the fridge, thread them onto the skewers, and place them on a baking sheet lined with foil. Cook the chicken breasts for 15-20 minutes, turning them over every 4-5 minutes until they are fully cooked.

To Serve:

Place the pita bread onto a platter and top with the lettuce.
