Cut the chicken into bite-sized pieces, coat with the green seasoning, then let marinate in a container for at least 30 minutes or longer for a richer flavor.
Preheat the oven to 400 °F/ 204 °C and place a rack in the middle of the oven. Then prepare a baking sheet or tray with non-stick spray or a piece of parchment paper and set aside.
Slice the tomatoes in half and place into a bowl with one tablespoon of oil and the Italian seasoning, tossing to coat the tomatoes.
Spread the seasoned tomatoes onto the baking sheet and bake for 5-10 minutes or until the edges begin to crisp and brown then remove from the oven.
Using a large deep skillet place the remaining 2 tablespoons of oil into the pan and place on medium heat.
Once the oil is hot, add the chicken into the skillet along with the seasonings and sauté for 5 minutes.
Stir the honey with the chicken and bring to a simmer.
Once the sauce thickens to a light syrup, remove it from the heat.
Plate the roasted tomatoes with the grilled chicken and drizzle some balsamic glaze over everything and serve warm with your choice of sides or salad like the Delicious Mexican Chopped Salad.
