Apple Toaster Strudels are a delicious reminder of childhood. The flaky pastry and sweet apple filling instantly transport you back to the first moment you tasted this nostalgic treat. However, store-bought Apple Toaster Strudels are often unhealthy. Luckily you can make apple toaster strudels from scratch. This version is made from gluten-free pastry dough and is slathered with a homemade apple filling and baked until golden brown. The Apple Toaster Strudel is then drizzled with sugar-free cream cheese icing and ready to eat. Your favorite childhood memories will come to mind as you devour these Apple Toaster Strudels. Ingredients

Apple Toaster Strudel:
  • 2 tablespoons Unsalted Butter
     

  • 2 large Granny Smith Apples, peeled, cored, grated
     

  • 1/4 cup Brown Sugar Substitute, packed
     

  • 1 1/4 teaspoons Cornstarch 
     

  • Juice of 1/2 a Lemon
     

  • 1/2 teaspoon Ground Cinnamon
     

  • 1/8 teaspoon Ground Ginger
     

  • 1/8 teaspoon Ground Allspice 
     

  • 1/8 teaspoon Ground Cloves
     

  • 1/4 teaspoon Salt 
     

  • 1 teaspoon pure Vanilla Extract 
     

  • 2 sheets Gluten-Free Pie/Pastry Dough, thawed
     

  • 1 small Egg
     

  • 1 tablespoon of Water

Cream Cheese Icing:
  • 2 ounces Cream Cheese
     

  • 1/2 cup Powdered Sugar Substitute
     

  • 1/2 teaspoon Ground Cinnamon 
     

  • 1/2 teaspoon Pure Vanilla Extract

Instructions

Apple Toaster Strudel:

Preheat oven to 375 °F.
 

Prepare oven for baking

Place butter into a small sauce pot and set it on the stove over low heat.

Add grated apples and stir to combine.

Add brown sugar substitute, cornstarch, lemon juice, cinnamon, ginger, allspice, cloves, salt, and vanilla extract, and mix to combine.

Cook for 8–10 minutes until the mixture thickens, then remove from the stove and let cool completely.

Dust your countertop with gluten-free flour, then place one sheet of pastry dough onto your countertop.

Dust pastry dough lightly with gluten-free flour and roll it into a square.

Cut pastry dough into four even-sized squares.

Place them onto a parchment-lined baking sheet 1 inch apart.

Repeat steps 6-9 and set them aside.

Whisk the egg and water in a small bowl until combined to make the egg wash.

Place a heaping teaspoon of the apple filling in the center of each rectangle and spread it out, leaving a 1/2-inch border.

Brush the remaining pastry dough with eggwash. Place pastry dough on top of the apple filling egg wash side down.

To seal the apple toaster strudel, press a fork into the edges of the puff pastry.

Prick the top of each apple toaster strudel with a fork.

Bake the apple toaster strudels for 25 minutes until golden brown.

Let the apple toaster strudels cool on the baking sheet for 5 minutes, then place them on a cooling rack and cool completely.

Cream Cheese Icing:

Add cream cheese, powdered sugar substitute, cinnamon, and vanilla extract to a small bowl and beat with a hand mixer until smooth and combined.

Place cream cheese icing into a piping bag. Cut the tip of the bag off, and drizzle over each apple toaster strudel.
