Apple Pie Overnight Oats are the key to adding bliss to your morning routine. Even better, this recipe is concocted from all-natural, vegan ingredients. Sautéed sweet and tart honey crisp apples or any apples you have rolling around the fridge, pure maple syrup, spiced with cinnamon and star anise, then soaked overnight with oat milk. Topped with crunchy walnuts in the morning, you have a complete vegan breakfast or a healthy snack that tastes just like apple pie. 

Oats are rich in fiber and help you fill full longer to give you the energy you need to get you through the day; you'll get twice the oat benefits with oat milk. Apples high in fiber are also the age-old fruit known for their cancer-fighting antioxidants and promoting healthy gut bacteria.

Instructions

Wash the apples in a strainer. Using a cutting board dice the apples into small pieces, removing the core. 
Place a medium-sized sauté pan onto the stovetop on medium heat, add the maple syrup, diced apples, cinnamon, and star anise into the pan. 
Sauté for 10 minutes to soften the apples and infuse the spices. 
Remove the apples from the heat & let cool for 10 minutes. Once cooked, remove the star anise from the pan & discard. 
Using a medium-sized bowl, mix the oats and oat milk with 3/4 of the apples, and reserve the remaining apples for garnishing the top of your overnight oats. 
Evenly spoon the oats into four glasses or dishes, top with the remaining apples and cover with plastic wrap, and place into the fridge overnight. They will keep for up to 4 days wrapped in the refrigerator
Once you're ready to eat up your oats, garnish with chopped walnuts (optional). That goes perfectly paired with Easy Breakfast - Bun, Cheese, Ham and Spinach Sandwich.
