While most people think Yams and Sweet potatoes are the same, they are actually different vegetables with different flavors. The Yam is more starchy and earthy with a slight sweetness, while the sweet potato is very sweet and silkier than starchy. This recipe will show you how to make Yam Pie, a Caribbean Creole favorite. This pie is salty and savory, flavored with local herbs and seasonings with a pinch of nutmeg. When you see the golden melted cheese and rich aroma of this dish, it will soon become a family favorite.

Ingredients

  • 4 large Yams - peeled and chopped into pieces

  • 1 tablespoon Green Seasoning

  • 1 medium Onion - diced

  • 3 cloves Garlic - minced

  • 3 Seasoning Peppers - minced

  • 1 cup Milk

  • 2 tablespoons Unsalted Butter

  • ¼ teaspoon Nutmeg

  • Salt & Black Pepper to taste

  • 1 cup New Zealand Cheddar cheese - grated

Instructions

Fill a large stockpot with ⅔ of water and bring to a boil. Then once boiling, add the yam and cook for 10 minutes or until fork-tender.

While the yams cook, preheat oven to 350 °F/ 178 °C, place a rack in the middle of the oven, and grease a baking dish with butter.

When the yams are tender, strain and place them into a large bowl, then mash and mix the green seasoning, onion, garlic, seasoning peppers, milk, butter, and nutmeg.

Season with salt and black pepper to taste, and then scoop into the prepared baking dish and smooth out the top.

Sprinkle the top with cheese and bake for 30-40 minutes or until the cheese is melted and golden.

Remove from the oven and allow the dish to cool for 15 min, then cut and serve warm.
