Instructions

Roasted Chickpeas

To a colander, add chickpeas. Rinse the chickpeas under cold running water. Add the chickpeas to a clean kitchen towel and pat them dry. If you have a few minutes to spare, let the chickpeas air dry for a few minutes. The chickpeas should be dry to the touch. Remove the loose chickpea skins that came off during the drying process. 

 

Place the chickpeas into a large bowl along with the olive oil, chili powder, smoked paprika, cumin, salt, garlic powder, and black pepper, and toss to combine. 
 

Preheat oven to 350 F. Spread the chickpeas onto a baking sheet in an even layer and roast them for 20-30 minutes, shaking the chickpeas every 10 minutes. The chickpeas are finished when they are golden, crispy on the outside, and soft in the center. 

Vegan Tacos

Arrange the tortillas on your workstation.
 

Smear the vegan sour cream onto the tortillas and add the spinach leaves, radishes, tomatoes, roasted chickpeas, and avocado slices. 
 

Serve vegan tacos with lemon slices if desired.
