What could be better than having delicious French toast for breakfast? French toast casserole! Trust me when I say you haven't had breakfast until you try this vegan French toast casserole. It is flavored with cinnamon and ground star anise powder. It also gets its sweetness from brown sugar and naturally sweet raspberries. This vegan recipe is dairy-free and loaded with flavor. Instead of dairy, this Vegan French Toast Casserole uses coconut milk to give the casserole a delicious but subtle coconut flavor.

Ingredients

  • 1 pound White or Vegan Brioche Bread 
     

  • 2 cups Raspberries

  • 2 1/3 cups Coconut Milk
     

  • 1/2 cup Brown Sugar
     

  • 2 1/2 tablespoons Arrowroot Powder

  • 2 tablespoons Ground Flaxseed 

  • 2 teaspoon Ground Cinnamon
     

  • 1 teaspoon Ground Star Anise Powder
     

  • 1 tablespoon Vanilla Extract
     

  • 1/4 teaspoon Sea Salt

Instructions

Slice the white or vegan brioche bread into 10-12 slices using a serrated edge knife.

Arrange the bread in an oven-safe baking dish. 

Layer 1 cup of raspberries between the slices of bread. Place remaining raspberries on top of the bread.

Whisk coconut milk, brown sugar, arrowroot powder, ground flaxseed, cinnamon, star anise powder, vanilla extract, and salt in a large bowl.

Pour the custard base over the bread, cover it with plastic wrap and chill it in the fridge for 1 hour. 
 

Preheat the oven to 350 °F. 

Bake the vegan french toast casserole for 50 minutes until the custard is set. 

Let the French toast casserole sit for 10 minutes before serving.
