Stumped as to what a walking taco casserole is? It's a simple casserole containing taco ingredients in a chip bag. You can eat this handheld delight while walking down the street, to your car, or on your way to any destination. Hence, the name walking taco casserole. To make the walking taco casserole, we sautéed ground beef until browned, added aromatics such as onions, bell peppers, and garlic, and a homemade taco seasoning, and cooked it until it was fragrant. Next, we added diced tomatoes and diced green chilies for a bit of heat. Instead of showing you how to assemble the Walking Taco Casserole one way, we figured we'd show you how to assemble it two different ways. The first way shows you how to assemble the walking taco casserole in a chip bag, which is pretty convenient, while the second method teaches you how to assemble the soup in a baking dish. Either way, you will have a gluten-free walking taco casserole that will become your new favorite dish! 

Can you make walking taco casserole ahead of time?

Yes, you can partially prepare the walking taco casserole ahead of time. However, do not add nacho chips, Mexican cheese, tomatoes, and parsley. Instead, prepare the ground beef mixture, place it in an airtight container and store it in the fridge for 2 days. Once ready to make the walking taco casserole, place the ground beef mixture into the skillet and cook it over medium-high heat for 5-8 minutes until thoroughly heated before assembling the casserole. 
 

Can Walking Taco Casserole be frozen?

Yes, you can freeze walking taco casserole. Place the ground beef mixture into a freezer-safe airtight container. Do not add the nacho chips, Mexican cheese, tomatoes, and parsley to the walking taco casserole. If baking the walking taco casserole, it may be best to freeze it in an aluminum pan double-wrapped with a layer of plastic wrap and foil. This way, you can toss the pan in the trash after eating the casserole. Label the soup with today's date and contents before placing it in the freezer. Thaw the walking taco casserole in the fridge overnight before assembling it.

Ingredients

Ground Beef:
  • 1 tablespoon Olive Oil
     

  • 1 pound Lean Ground Beef
     

  • 1 White Onion, diced
     

  • 1 Red Bell Pepper, diced 
     

  • 2 cloves Garlic, minced 
     

  • 2 teaspoons Chili Powder 
     

  • 1 teaspoon Smoked Paprika 
     

  • 1/2 teaspoon Cayenne Pepper 
     

  • 1 teaspoon Salt 
     

  • 1 teaspoon Cumin 
     

  • 1/4 teaspoon Dried Oregano
     

  • 14 ounces Diced Tomatoes, drained
     

  • 4 ounces Green Chilies, drained

Assembly:
  • 3 cups Gluten-Free Nacho Chips

     

  • 1 cup Mexican Taco Cheese
     

  • 2 medium Roma Tomatoes, diced
     

  • 2 tablespoons Fresh Parsley, chopped

Instructions

Ground Beef:

To a large skillet, add one tablespoon of olive oil and set it over medium-high heat. 
 

Add the ground beef and cook it for 8-10 minutes, breaking it into smaller pieces until it is no longer pink. 
 

Stir in the diced onions and bell peppers and cook them for 3 minutes until they soften. 
 

Stir in the garlic and cook it for 1 minute until fragrant.
 

Drain the ground beef in a colander if necessary, then return it to the skillet. 
 

Stir in the chili powder, smoked paprika, cayenne pepper, salt, cumin, and oregano, and cook it for 1 minute until it is fragrant. 
 

Stir in the diced tomatoes and green chilies and cook it for 5-8 minutes until everything is heated. 
 

To assemble the walking taco casserole in chip bags:

Wrap 6 chip bags with foil, then arrange the bags upright on a platter. 
 

Add 1/2 cup of nacho chips to each bag and top with the ground beef mixture. 
 

Top walking taco casserole with Mexican cheese, diced tomatoes, and parsley before serving. 

To assemble the walking taco casserole in a baking dish:

Preheat the oven to 375 °F.

 

Place the ground beef mixture in a 9 by 13-inch baking dish and spread it into an even layer. 
 

Top with the nacho chips and Mexican cheese and bake it for 10 minutes until the cheese melts. 
 

Remove the walking taco casserole from the oven and top it with the tomatoes and parsley before serving.
