Once ready to make the walking taco casserole, place the ground beef mixture into the skillet and cook it over medium-high heat for 5-8 minutes until thoroughly heated before assembling the casserole.

Ground Beef:
To a large skillet, add one tablespoon of olive oil and set it over medium-high heat.   
Add the ground beef and cook it for 8-10 minutes, breaking it into smaller pieces until it is no longer pink.   
Stir in the diced onions and bell peppers and cook them for 3 minutes until they soften.   
Stir in the garlic and cook it for 1 minute until fragrant.  
Drain the ground beef in a colander if necessary, then return it to the skillet.   
Stir in the chili powder, smoked paprika, cayenne pepper, salt, cumin, and oregano, and cook it for 1 minute until it is fragrant.   
Stir in the diced tomatoes and green chilies and cook it for 5-8 minutes until everything is heated.   
To assemble the walking taco casserole in chip bags:
Wrap 6 chip bags with foil, then arrange the bags upright on a platter.   
Add 1/2 cup of nacho chips to each bag and top with the ground beef mixture.   
Top walking taco casserole with Mexican cheese, diced tomatoes, and parsley before serving. 
To assemble the walking taco casserole in a baking dish:
Preheat the oven to 375 °F.  
Place the ground beef mixture in a 9 by 13-inch baking dish and spread it into an even layer.   
Top with the nacho chips and Mexican cheese and bake it for 10 minutes until the cheese melts.   
Remove the walking taco casserole from the oven and top it with the tomatoes and parsley before serving.
