Roasted Golden Beets will save you a lot of mess and have a ton of flavor by sprinkling them with sea salt, olive oil, fresh garlic & thyme, wrapping them up in tin foil & simply roasting them in the oven until fork-tender. 

Serve these vibrant roasted beets as a side dish, chilled & tossed with your salads, add them to a sandwich or garnish your avocado toast. Preheat oven to 350 °F.
Layer 2 sheets of tin foil on top of themselves to create a double layer of foil. They should be large enough to cover & wrap up all your golden beets. 
Place the beets onto the foil sheets & rub them all over with the olive oil & sea salt.
Add the fresh thyme & garlic into the foil and wrap everything up, creating a package with the seam facing up. Leaving the skins on the garlic will prevent the garlic from burning during a more extended cooking period. 
Place your package onto a baking sheet or dish & roast them in the oven for 35-40 minutes. 
To check the beets for doneness, open the foil package & poke them with a fork. As you would for potato, the fork should slide in with ease. If not, return them to the oven for additional cooking. The result should be a firm but cooked beet & not an overcooked soggy one unless you enjoy your vegetables like that. 
Remove the beets from the oven, open up the foil & allow them to cool for 5 minutes before handling them. 
Put on a pair of gloves in order to not stain your hands for this next step.
Place the beets onto a cutting board, discarding the foil, thyme & garlic. Using a pairing knife cut off the top & bottom of each beet. You should be able to peel away the remainder of the peel using your hands. If all the peel doesn't come off, remove the remaining peel with your pairing knife. 
You can them cut them up into quarters or slice the beets for the dish you will be adding them to. If having them as a side dish, you can arrange them onto a plate give them a slight drizzle of olive oil and sea salt. You're now ready to dig into this heart-healthy vegan dish.
