Need a yummy dip for your veggies? You can't go wrong with this Roasted Garlic Aioli. The roasted garlic and cashews add sweetness, nuttiness, and creaminess, while the nutritional yeast adds a cheesiness that makes eating veggies much tastier. The Dijon mustard and lemon juice also balance the aioli out with some heat and acidity; it's a party in your mouth. Moreover, this roasted garlic aioli is vegan-friendly as we used no mayonnaise. Serve with toasted crusty bread, fresh veggies, or our Air Fryer Sweet Potato Fries.

What is roasted garlic aioli made of?

Roasted garlic aioli is made of garlic, olive oil, salt, pepper, raw cashews, water, Dijon mustard, nutritional yeast and lemon juice.

What is the difference between aioli and garlic aioli?

There is no difference between the two; the names refer to the same condiment.

Is garlic aoili healthy?

Yes, it is. It is low in calories and low in saturated fats. Furthermore, since we used cashews instead of mayo, this aioli contains a lot of heart-healthy fats compared to traditional garlic aioli.

Is aoili high in cholesterol?

No, it's not.

Ingredients

Roasted Garlic
  • 1 head Garlic

  • 2 teaspoons Olive Oil

  • Pinch Salt

  • Pinch Pepper

Aioli
  • 1 cup Raw Cashews

  • 3/4 cup Water

  • 1 teaspoon Dijon Mustard

  • 1 teaspoon Nutritional Yeast

  • Juice of 1/2 Lemon

  • Pinch Salt

  • Pinch Pepper

For Serving:
  • Toasted Crusty Bread, sliced (Optional)

Instructions

Roasted Garlic

Preheat oven to 400 °F.

Prepare oven for baking

Trim the head of garlic so that the tops of the cloves are exposed. Drizzle with olive oil and top with salt and pepper.

Wrap in aluminum foil and bake in a baking dish for 30 minutes. Allow to cool.

Roasted garlic
Aioli

Squeeze out the garlic cloves, and add to a blender. Add raw cashews, water, Dijon mustard, nutritional yeast, lemon juice, salt and pepper. Blend until creamy and smooth.

Blending all the ingredients
For Serving:

Serve at room temperature with sliced, toasted crusty bread.
