Meatballs are such a diverse food. You can make meatballs from ground beef, vegetables, pork, or ground chicken. We chose to utilize ground beef, but you can use ground chicken if you don't eat beef. This keto recipe is loaded with flavor and delicious. First, we seared the Parmesan Meatballs until golden brown; then, we simmered them in the marinara sauce as they baked in the oven. Finally, we topped the Parmesan meatballs with Parmesan and mozzarella cheese and tomatoes to elevate the dish.

Ingredients

Meatballs
  • 1 pound Lean Ground Beef

  • 1/2 cup Almond Flour

  • 1/4 cup freshly grated Parmesan Cheese

  • 1 tablespoon Italian Seasoning

  • 1 Large Egg

  • 1/3 cup minced Onion 

  • 2 cloves Garlic, grated finely

  • 2 tablespoons Parsley, minced

  • 1/4 teaspoon Kosher Salt

  • 1/2 teaspoon Black Pepper

  • 1/4 teaspoon Cayenne Pepper

  • 1/2 teaspoon Smoked Paprika

  • 1/4 cup Olive Oil

Meatballs Bake
  • 2 cups Marinara Sauce

  • 1 teaspoon Sugar-free Sweetener

  • 1/4 freshly grated Parmesan Cheese

  • 1 cup shredded Mozzarella Cheese

  • 12 Cherry Tomatoes

  • 2 tablespoons chopped Parsley

Instructions

Meatballs

Preheat the oven to 400 °F.

Mix the ground beef, almond flour, Parmesan cheese, Italian seasoning, egg, onions, garlic, parsley, salt, black pepper, cayenne pepper, and smoked paprika in a large bowl until thoroughly combined.

Divide the beef mixture into 10-15 meatballs and place them onto a platter. 

Place the olive oil into a large cast-iron skillet and set it over medium-high heat. 

Add the Parmesan meatballs to the skillet in a single layer. Cook for 4-5 minutes until browned. 

Turn the Parmesan meatballs over and cook them for 3-4 minutes. 

Place the Parmesan meatballs onto a plate.

Meatball Bake

Combine the marinara sauce and sugar-free sweetener in a medium bowl.

Pour the marinara sauce into a baking dish and spread it in an even layer. Add the meatballs.

Add Parmesan cheese and mozzarella cheese. 

Put on cherry tomatoes on top of the cheese. 

Bake the Parmesan meatballs in s preheated oven for 15-20 minutes until the cheese melts and is golden.

Garnish the Parmesan meatballs with parsley before serving.
