This recipe is a great one-pot idea for a family meal and is ready in no time. We packed this recipe with classic Italian flavors you love in one easy-to-prepare meal.

Ingredients

  • 4 Boneless Chicken Breasts or Thighs - cut into bite-size chunks

  • 1 tablespoon Olive Oil

  • 1 medium Onion - diced

  • 3 cloves Garlic - minced

  • 1 tablespoon fresh Basil - chopped

  • 1 teaspoon Italian Seasoning

  • 16 ounces Rotini Pasta

  • 24 ounces Jar of Marinara Sauce

  • 1 cup Mozzarella cheese shredded

  • 1/2 cup Parmesan cheese

  • Salt & Black Pepper to taste

  • Water for cooking

Instructions

Place heavy bottom pot in medium-high heat and add the oil when the oil is hot add the onion, garlic, basil and sauté for 3 minutes.

Add the chicken and sauté for 5 minutes.

Stir in the Marinara sauce, Italian seasoning, fill the empty jar with water, add it to the pot, and then bring to a boil.

Fill a heavy bottom pot with water and a pinch of salt. Bring to a boil and cook the pasta to al dente & strain in a colander. 

Once the pot is boiling, reduce to medium, cover and let simmer for 8-10 minutes, check the pot periodically, stirring with a wooden spoon. 

When the sauce is cooked, add in the pasta along with two-thirds of the mozzarella cheese and the Parmesan cheese, mix until thoroughly combined.

Remove from the heat, serve warm with in a serving plate and sprinkle of the last of the mozzarella cheese on top, and the freshly baked Vegan Garlic Bread, and enjoy!
