Can't decide whether to have chili or mac and cheese? With this One Pot Chili Mac, you don't have to choose. Cheesy, gooey mac and cheese is combined with a bean and beef chili for a dish that the whole family will love. Besides being delicious, this dish is packed with nutrition. It contains calcium and iron, which support strong bones and red blood cell production. It also provides vitamin D, which facilitates a healthy immune system.

Ingredients

  • 1 tablespoon Olive Oil

  • 3 cloves Garlic, minced

  • 1 Onion, diced

  • 1 Red Bell Pepper, diced

  • 6 ounces Ground Beef

  • 4 cups Beef Broth

  • 1x15 ounce can Diced Tomatoes

  • 1 cup Canned Red Kidney Beans, drained and rinsed

  • 2 teaspoons Chili Powder

  • 1 teaspoon Cumin

  • 1/2 teaspoon Salt

  • 1/2 teaspoon Pepper

  • 10 ounces Elbow Macaroni

  • 1 cup Cheddar Cheese, shredded

  • Fresh Parsley for garnish (Optional)

Instructions

To large deep skillet over medium high heat, add olive oil.

Once olive oil is hot, add garlic, onion, red bell peppers, and ground beef. Cook for 5 minutes until ground beef is browned.

Add beef broth, tomatoes, red kidney beans, chili powder, cumin, salt, and pepper. Bring to a simmer, stirring well using a wooden spoon.

Once the mixture simmer, add elbow macaroni and bring to a boil. Once the mixture starts to boil, reduce heat, and simmer covered for 15 minutes until macaroni is cooked through.

Remove from heat and top with cheddar cheese. Cover for 2 minutes to let the cheese melt. 

Ladle Into bowls, garnishing with parsley.
