1 cup Dried Black Eyed Peas
1 teaspoon Baking Soda
2 tablespoons Extra Virgin Olive Oil
1 tablespoon Green Seasoning
2 tablespoons Tomato Paste
2 medium yellow Onions - minced
2 cloves Garlic - minced
1 thumb Ginger - minced
2 Celery stalks - diced
3 Seasoning Peppers - minced
3 Jalapeño peppers - roasted, seeds removed & diced
1 medium Carrot - cut into bite sized pieces
16 ounce canned Tomatoes - fire-roasted or with chillies
2 cups Spinach Fresh - rough chop
3 Thyme Sprigs
1 Rosemary Sprig
½ teaspoon Paprika
½ teaspoon Cumin
½ teaspoon Chili powder
1 liter Vegetable broth
1 Lime - juiced
Salt & Black Pepper to taste
