Most people assume Lemon Madeira Cake comes from Portugal. However, this traditional English cake is called Madeira because it's usually served with Madeira wine. If you don't drink alcohol, no worries. You can serve this cake with Lemon Grass or Orange Peel Tea instead. And since we used gluten-free all-purpose flour, this cake is gluten-free. Overall, this Lemon Madeira Cake is to die for; it's buttery, moist, and sure to send you into a lemony coma. 

Why is Madeira cake different?

Madeira cake is often compared to pound or Victorian sponge cakes because it uses the creaming method to mix the butter and sugar. However, it's different because it has a denser texture and no milk. 
 

Why is Madeira cake so dry?

Madeira cake is not as moist and light as other cakes. That's because the proportions of fat and eggs are higher, giving it a drier texture. You must follow the recipe to a tee so it is not overly dry. The cake will dry if you add too much flour or fat to the batter. 
 

What flavor is Madeira cake?

Traditionally, Madeira cake has a lemon flavor. However, there are also orange and lime-flavored Madeira cakes.

Ingredients

  • Non-Sick Cooking Spray 
     

  • 1/2 cup (1 stick) Unsalted Butter, room temperature
     

  • 3/4 cup Granular Sugar-Free Sweetener 
     

  • 3 large Eggs
     

  • Juice of 1 Lemon
     

  • 1/2 cup Blanched Almond Flour 
     

  • 1 3/4 cups Gluten-Free All-Purpose Flour, sifted
     

  • Zest of 1 Lemon 
     

  • 2 teaspoons Baking Powder 
     

  • 1/4 teaspoon Salt

Instructions

Preheat oven to 350 °F. Next, coat a loaf pan with non-stick cooking spray. Set it aside. 
 

Prepare loaf pan

Add butter and sugar-free sweetener to a large bowl and beat it with a hand mixer until combined and fluffy.

Add in each egg and beat until combined making sure to beat well after each addition.

Add lemon juice and mix until combined.

Whisk the almond flour, gluten-free all-purpose flour, lemon zest, baking powder, and salt in a medium bowl until combined. 
 

Prepare dry ingredients

Add the almond flour mixture to the egg mixture and mix until combined and the cake batter is smooth.

Pour the Madeira cake batter into the prepared pan. Smooth it into an even layer and bake it for 50 minutes until a skewer inserted into it comes out clean.

Let the Madeira cake cool in the pan for 10 minutes. 
 

Cooling the Lemon Madeira Cake

Remove the Madeira cake from the pan. Then place the Madeira cake on a cooling rack to cool before cutting it into 10 slices.
