Traditional pasta salad is loaded with tons of carbs. Eating a massive amount of carbs would defeat the purpose of being on the keto diet. Luckily you don't have to exclude pasta salad from your diet now that you've got this delicious keto recipe. This salad is made from zucchini instead of wheat pasta. Traditional pasta contains more carbs than zucchini. Two ounces of wheat pasta contains 32 grams of carbs, while a cup of zucchini has about four carbs. 

This Keto Pasta Salad is also made with cherry tomatoes and creamy avocados. The pumpkin seeds add texture to the salad, while the lemon olive oil dressing adds a bright and fresh flavor. Serve this keto pasta salad with a protein of your choice to make this meal complete.

Ingredients

Pasta Salad
  • 4 Medium Zucchini

     

  • 1 1/2 cups Cherry Tomatoes, halved 

  • 4 Green Onions, sliced

  • 2 Avocados, peeled, cored, sliced

  • 1/2 cup Pumpkin Seeds

  • 1/4 cup Parsley Leaves

Dressing
  • 1/4 cup Extra Virgin Olive Oil

     

  • 1 tablespoon White Wine Vinegar

  • Juice of 1 Lemon 

     

  • 1/2 teaspoon Salt

     

  • 1/2 teaspoon Pepper

     

  • 1 tablespoon Grated Garlic 

     

  • 1 teaspoon Grated Ginger

Instructions

Keto Pasta Salad

Trim the ends of zucchini. Use a vegetable spiralizer to spiralize the zucchini. 

Divide the zucchini noodles between 4 salad bowls. 

Add the cherry tomatoes, green onions, avocados, pumpkin seeds, and parsley. 

Dressing

To a small bowl, add olive oil, white wine vinegar, lemon juice, salt, pepper, garlic, and ginger. Whisk to combine.

 

Pour over keto pasta salad and toss to combine.
