Cinnamon rolls are the perfect on-the-go breakfast or brunch food. Unlike traditional cinnamon rolls, these Keto Cinnamon Rolls are made with almond flour and coconut flour, both low in carbs. Aside from being low in carbs, almond flour is rich in heart-healthy fats and vitamin E, promoting healthy skin. Almond flour is also good for your bones because it contains manganese, magnesium, and phosphorus. Coconut flour is quite nutritious too. It's rich in fiber which keeps you satiated and promotes gut health. It also contains potassium which is essential for heart health. The dough also uses lemon zest and a dash of cardamom to elevate its flavor. Of course, no cinnamon roll would be complete without frosting, and this keto recipe is coated with a delicious sugar-free cream cheese frosting. Yum!

Ingredients

Dough
  • 1 cup + 2 tablespoons Almond Flour
     

  • 1/3 cup Coconut Flour
     

  • 1 tablespoon Lemon Zest
     

  • 1/4 teaspoon Cardamom
     

  • 1 cup Sugar-Free Sweetener

  • 3 tablespoons Flaxseed meal
     

  • 2 teaspoons Baking Powder
     

  • 1 teaspoon Xanthan Gum
     

  • 1/4 teaspoon Fine Sea Salt
     

  • 3 Large Eggs, room temperature

  • 3 tablespoons Almond Milk
     

  • 2 tablespoons Softened Butter
     

  • 1 teaspoon Vanilla Extract
     

  • 1 teaspoon Lemon Extract
     

  • 3 tablespoons Warm water

  • Non Stick Cooking Spray 

Filling
  • 1/4 cup Butter, softened

     

  • 1/2 cup Sugar-Free Sweetener
     

  • 1 teaspoon Ground Cinnamon
     

  • 1/4 teaspoon Nutmeg 
     

  • 1/8 teaspoon Cloves

Cream Cheese Frosting
  • 1/4 cup Fat-Free Cream Cheese, room temperature

     

  • 2 tablespoons Softened Butter
     

  • 6 tablespoons Sugar-Free Powdered Sugar
     

  • 1 teaspoon Vanilla Extract
     

  • 2 tablespoons Almond Milk

Instructions

Dough

Preheat oven to 400 °F. 
 

Set a sheet of parchment paper in an oven-safe glass baking dish. Lightly spray with nonstick cooking spray. 

Whisk almond flour, coconut flour, lemon zest, cardamom, sugar-free sweetener, flaxseed meal, baking powder, xanthan gum, and sea salt in a large bowl. 
 

Mix in eggs, almond milk, butter, vanilla extract, lemon extract, and warm water. 

Let the dough rest for 5 minutes. 

Filling

Whisk the butter, sugar-free sweetener, cinnamon, nutmeg, and cloves in a small bowl and set it aside. 

To Assemble

Shape the cinnamon roll dough into a ball, flatten the dough slightly, then place it between 2 sheets of parchment paper.

Roll the dough into a 13 x 10-inch rectangle.

Remove the top sheet of parchment paper from the dough. Spread the cinnamon filling onto the dough, leaving a 1-inch border. 

Beginning with one end of the dough, use the parchment paper to help you carefully roll the dough into a tight log. Next, dampen your fingertips with water and seal the log. 

Cut the log into 8 even pieces and place them onto the prepared baking dish. 

Bake the cinnamon rolls for 5 minutes. Decrease oven temperature to 350 °F. 

Bake the keto cinnamon rolls for 15-20 minutes until golden brown. Cover them loosely with foil if the cinnamon rolls start getting too dark to prevent them from burning. 

Let cinnamon rolls cool completely. 

Cream Cheese Frosting

Add cream cheese, butter, and sugar-free powdered sugar to a bowl.

With an electric hand mixer, beat it until it is light and fluffy. 

Add vanilla extract and one tablespoon of almond milk until a thick yet spreadable frosting forms. 

Add the second tablespoon of almond milk if necessary. 

Spread the cream cheese frosting onto the cinnamon rolls before serving.
