Ingredients

  • 1/4 cup Olive Oil

  • 1 large Red Onion, diced small

  • 4 cloves Garlic, minced

  • 2 Celery sticks, diced small

  • 2 medium Carrots, diced small

  • 1 tablespoon Oregano

  • 1 Bay Leaf

  • 2 (14-ounce) cans Chickpeas, drained

  • 3 cups Vegetable Stock

  • Juice of 1/2 a Lemon

  • Salt and Pepper to taste

  • Fresh Parsley for garnish (Optional)

Instructions

To a large pot over medium heat, add olive oil. Once hot, add the red onion and sauté for 2 minutes. Add the garlic and sauté for 30 seconds.

Add celery, carrots, oregano and bay leaf, mixing well. Add the chickpeas and vegetable stock, stirring well.

Bring to a boil, then place the lid on the pot. Lower heat to low-medium. Simmer for 25 to 30 minutes.

Once done, add lemon juice and salt and pepper to taste. Ladle into soup bowls and garnish with parsley.
