Ingredients

  • 2 tablespoons Olive Oil 

     

  • 1 medium Red Onion, diced

     

  • 3 garlic Cloves, minced

     

  • 2 teaspoons Fresh Ginger, grated

     

  • 2 teaspoons Fresh Thyme 

     

  • 1/2 teaspoon ground Sage

     

  • 1 teaspoon Kosher Salt 

     

  • 1/4 teaspoon Black Pepper

     

  • 10 medium Carrots, peeled, roughly chopped

     

  • 1 large Sweet Potato peeled, diced into 1/2-inch cubes

     

  • 4 cups Low-Sodium Vegetable Broth



     

  • 2 1/4 cups Unsweetened Coconut Milk

     

  • 1/2 cup Roasted Unsalted Peanuts

Instructions

Place the olive oil into a Dutch oven pot and set it over medium-high heat.

Add the red onions and cook them for 3-4 minutes until they are translucent and softened.

Stir in the garlic, ginger, thyme, sage, salt, and pepper, and cook for 1 minute until fragrant.

Stir in the carrots, sweet potatoes, and vegetable broth. Let the carrot sweet potato ginger soup boil, then lower the heat, cover and cook for 30 minutes until the sweet potatoes are tender.

Place the carrot sweet potato ginger soup into a blender and blend until smooth and creamy.

Pour the carrot sweet potato soup into the pot and stir in 1 3/4 cups of coconut milk. Cook the carrot sweet potato soup for another 5 minutes on low heat until it is thoroughly heated.

Ladle the carrot sweet potato soup into eight bowls and garnish each bowl of soup with a tablespoon of coconut milk and some roasted peanuts.
