Made with a plant-based source of protein (tofu), these fajitas are a healthy alternative to classic fajitas - and are perfect for Meatless Monday. And they're bursting with flavor from the spices. No bland tofu here!

Besides being high in protein, these fajitas are also high in fiber. And they're excellent sources of iron and calcium. Who says yummy food can't be good for you too?

Serve with Roasted Tomato Salsa.

What makes a fajita is meat (traditionally steak) cooked with bell peppers and onions. In our case, we used a plant-based protein source (tofu) instead of meat.

Ingredients

  • 1 tablespoon Olive Oil

  • 14-ounce block Extra Firm Tofu, pressed

  • 1 teaspoon Cumin

  • 1 teaspoon Paprika

  • 1 teaspoon Garlic Powder

  • 1 teaspoon Onion Powder

  • 1 teaspoon Red Pepper Flakes

  • 1/2 teaspoon Salt

  • 1/4 teaspoon Black Pepper

  • 1 medium Yellow Onion, sliced into thin strips

  • 1 medium Green Bell Pepper, sliced into thin strips

  • 1 medium Red Bell Pepper, sliced into thin strips

  • 4 medium Flour Tortillas

Instructions

To a large non-stick frying pan over medium heat, add olive oil. Once hot, add the tofu and fry for 8 minutes, flipping halfway through.

To a small bowl, add cumin, paprika, garlic powder, onion powder, red pepper flakes, salt and black pepper. Mix well.

Add the seasoning mixture to the tofu, along with one tablespoon of water. Stir until mixed well.

Add the yellow onion, green bell pepper, and red bell pepper to the tofu. Cook for 5 minutes. If your pan starts to dry out while cooking the vegetables, add one tablespoon of water.

While the vegetables are cooking, preheat the oven to 400 degrees Fahrenheit.

Place the flour tortillas on a parchment paper-lined baking sheet.

Bake the flour tortillas for 5 minutes to warm them up.

Portion the flour tortillas onto 4 individual plates. Top with the tofu fajita mixture and serve with your favorite toppings.
