Are you looking for a great way to add more veggies to your breakfast? These easy Cauliflower Waffles are the perfect way to do that. They're crispy, golden, cheesy, and so yummy ... you won't mind having veggies for breakfast. To make the batter, you'll be using eggs, mozzarella cheese, riced cauliflower and a bit of almond flour to bind the waffle batter. Then you'll be seasoning the batter with Italian seasoning, onion powder, garlic powder, paprika and red chili peppers. 

And since you're using almond flour, these waffles are keto-friendly. Almond flour is also rich in vitamin E, protein, and heart-healthy fats. Meanwhile, cauliflower contains lots of nutrients including vitamin C, K, B6, choline and folate.

To make it a meal, feel free to add some fried eggs, bacon or sausage. Enjoy!

Ingredients

Cauliflower Waffles
  • 1/2 Head Cauliflower, cut into florets

  • 1.5 cups shredded Mozzarella Cheese

  • 2 Eggs

  • 2 tablespoons Almond Flour

  • 1/2 teaspoon Italian Seasoning

  • 1/2 teaspoon Onion Powder

  • 1/2 teaspoon Garlic Powder

  • 1/2 teaspoon Paprika

  • 1/4 teaspoon Red Chili Pepper

  • Olive oil non-stick cooking spray

  • Fresh basil for garnish (Optional)

Instructions

Cauliflower Waffles

Preheat the waffle maker to about 325 F.

Add cauliflower florets to a food processor and process until it looks like rice. Transfer the cauliflower to a medium bowl.

Add mozzarella cheese, eggs, almond flour, Italian seasoning, onion powder, garlic powder, paprika and red chili pepper. Mix well.

Spray or brush the heated waffle maker with olive oil.

Scoop 1/2 cup of the cauliflower mixture to the waffle maker. Close the lid and cook for about 5 minutes until the waffle is cooked through.

Remove the waffle garnish waffles with fresh basil and repeat with the rest of the cauliflower mixture.
