Preheat the oven to 400 °F/ 204 °C and place a rack in the center of the oven, then coat oven-safe dish that has a cover with butter and set aside. Alternatively, foil can also make one large packet or envelope to cook the fish inside.
Using a small bowl, mix the oil, zest, juice, garlic, and old bay seasoning until it combines into a sauce.
Season the fish with salt, and black pepper, then place in the buttered dish, then cover with the sauce.
Cover and place in the oven to bake for 15-20 minutes or until the salmon has a flaky texture.
Remove from the oven and serve with your choice of side dish.
