Chicken quesadillas are great, but these air fryer chicken quesadillas are on a whole other level! These homemade chicken quesadillas are made with sautéed onions and bell peppers, shredded chicken, and lots of Mexican cheese.

The chicken quesadillas are air fried until crispy then cut into 4 and topped with Mexican hot sauce and pico de Gallo.

These chicken quesadillas are delicious and pair perfectly with cilantro lime rice or refried black beans if you want to turn a light lunch into dinner.

  • 2 tablespoons Olive Oil

  • 1 small White Onion, minced

  • 1 small Red Bell Pepper, diced

  • 8 6-inch Gluten-free Tortillas

  • 2 cups Mexican Cheese, shredded

  • 2 cups Chicken cooked, shredded

  • Non-stick cooking spray

  • 1/2 cup Mexican hot sauce (optional)

  • 1/2 cup Pico De Gallo


Place the olive oil into a small skillet and set it over medium-high heat.

Prepare skillet

Add the onions and bell peppers to the skillet and cook them for 2–3 minutes until they soften.

Remove the onions and bell peppers from the stove and let them cool slightly.

Preheat the oven to 360 °F. Place 1 tortilla on your cutting board.

Sprinkle 1/4 cup of Mexican cheese on top of the tortilla.

Top with some of the onions and bell peppers, 1/2 cup of shredded chicken, and 1/4 cup of Mexican cheese, then place a tortilla on top.

Spray the top of the quesadilla with non-stick cooking spray, then insert 4 toothpicks into the tortilla.

Place the chicken quesadilla into the air fryer basket. Cook it for 3 minutes, then turn it over, spray it with non-stick cooking spray, and cook it for another 3 minutes.

Place the quesadilla onto a cutting board, then cut it into 4 slices with a chef's knife and arrange them on a dinner plate in a circle.

Repeat steps 4-9 to make the remaining chicken quesadillas.

Add 2 tablespoons of Mexican hot sauce in the center of each quesadilla, then top with 2 tablespoons of pico de Gallo.
