What is Adobo? Adobo is one word that has many meanings depending on what part of the world you are in. In East Asia, Adobo is known as the unofficial national dish of the Philippines made with Chicken or Pork. The dish is named for its mixture of seasonings and the cooking method. In the Caribbean or Central, America Adobo refers to a variety of dried herbs generally used for meats and adapted by commercial brands. However, the word Adobo comes from the Spanish word ‘adobar,’ which means to marinate. This marinade is another mixture of seasonings with a wet vinegar base. Now we can see how and why Adobo has spread and evolved through the individual local influences during Spanish colonization because these areas were once under Spanish rule. This recipe will focus on the Caribbean interpretation of Adobo, and we will show you how to create your dry seasoning mixture to use in your home cooking.

Ingredients

  • 6 tablespoons Salt

  • 6 tablespoons Garlic Powder

  • 4 tablespoons Paprika

  • 4 tablespoons Cumin - Ground

  • 4 tablespoons Oregano - dried

  • 2 tablespoons Black Pepper

  • 2 tablespoons Onion Powder

  • 2 tablespoons Turmeric - ground

  • 1 tablespoon Chili Powder

Instructions

Mix all the seasonings and store them in a sanitized jar or bottle.

Use as a dry rub for meats or as an all-purpose seasoning in cooking.
