Ingredients

  • 1 pound Spinach - fresh or frozen

  • 1 tablespoon Virgin Coconut Oil

  • 250 ml Coconut Milk - canned

  • 1 medium Onion - diced

  • 3 cloves Garlic - minced

  • 1 tablespoon Arrowroot Starch

  • Salt & Black Pepper to taste

Instructions

Using a large deep skillet add the oil and bring to medium heat.

Once the oil is hot, add the onion and garlic, then sauté for 3 minutes.

Mix in the spinach and sauté until wilted.

Mix the arrowroot starch with the coconut milk and stir it with the spinach mixture into the pan.

Stir until the mixture becomes creamy, then season with salt and pepper to taste, serve warm in bowls.
