What does baking soda do in oatmeal cookies?

When mixed with acid, baking soda creates carbon dioxide, helping the strawberry oatmeal cookies to rise and spread. Additionally, baking soda also increases the pH of the cookies, helping them brown better.

Why do my oatmeal cookies get hard?

There are many reasons why your oatmeal cookies may be hard. For example, there may be too much sugar in the oatmeal cookie dough. Too much sugar will make the oatmeal cookies hard and crisp. Another reason your oatmeal cookies may be hard is the oatmeal cookie dough was held in the fridge for too long. Other reasons your oatmeal cookies may be hard include over-mixing the cookie dough, over-beating the butter, and baking the cookies at a temperature that's too high.

Is it better to use baking soda or baking powder in oatmeal cookies?

It depends on your preference. Baking powder creates light, airy cookies. In contrast, baking soda creates chewy cookies.
