Do you put eggs in oatmeal cookies?

Traditionally eggs go in strawberry oatmeal cookies. However, since this is a vegan recipe, there are no eggs in these strawberry oatmeal cookies.
 

What does baking soda do in oatmeal cookies?

When mixed with acid, baking soda creates carbon dioxide, helping the strawberry oatmeal cookies to rise and spread. Additionally, baking soda also increases the pH of the cookies, helping them brown better.  
 

Why do my oatmeal cookies get hard?

There are many reasons why your oatmeal cookies may be hard. For example, there may be too much sugar in the oatmeal cookie dough. Too much sugar will make the oatmeal cookies hard and crisp. Instructions

Preheat your oven to 350 °F, then line a baking sheet with parchment paper. Set it aside. 

Prepare baking pan

Mix the ground flaxseed meal and water in a small bowl
 

Prepare flaxseeds in water

Whisk the oats, gluten-free all-purpose flour, baking powder, salt, cinnamon, cloves, and ginger in a medium bowl until combined.
 

Prepare dry ingredients

Whisk the apple sauce, maple syrup, coconut oil, vanilla extract, and flaxseed mixture in a large bowl until combined.
 

Prepare wet ingredients

Add the oat mixture to the wet ingredients and mix using a rubber spatula until combined.

Gently fold in the strawberries and semi-sweet chocolate chips and let the strawberry oatmeal cookie dough sit for 10 minutes.

Scoop the strawberry oatmeal cookie batter onto the prepared baking sheet using a cookie scoop, placing each cookie 2 inches apart. Press down on each strawberry oatmeal cookie slightly,

Bake the strawberry oatmeal cookies for 12–15 minutes until they are slightly golden around the edges.

Let the strawberry oatmeal cookies cool on the baking sheet for 10 minutes, then place them on a cooling rack to cool completely.
