There's nothing quite as comforting as a simple bowl of pasta. Whether it's pasta with tomato sauce, cream sauce, or coated in olive oil, it's one of the most accessible comfort foods one can make in less than 30 minutes. This recipe for Spaghettoni with Mushrooms is exactly what we're looking for when it comes to a quick, comforting bowl of pasta. What is Spaghettoni? In a nutshell, it's a thicker version of standard Spaghetti, which elevates the textural experience of the perfect al dente bite with each mouthful. To balance this pasta texture, we have added extra virgin olive oil, garlic, and cremini mushrooms for their earthy and aromatic qualities. It's a super simple, quick recipe that tastes great and will satisfy any pasta lover's appetite.

Ingredients

  • 10 ounces Spaghettoni (Thick Spaghetti)

  • 3 tablespoons Extra Virgin Olive Oil

  • 8 ounces Cremini Mushrooms - sliced

  • 3 cloves Garlic

  • 1/4 cup Parmigiano-Reggiano cheese - grated

  • Salt & Black Pepper to taste

Instructions

Using a 4-6 quart saucepan add 3-5 quarts of water, one teaspoon of salt, and one tablespoon of oil to a boil.

Once the water is boiling, add the pasta and cook for 10-15 minutes stirring occasionally.

While the pasta is cooking using a large deep skillet, add two tablespoons of oil and garlic, bring to medium-high heat and sauté for 2 minutes.

Add the mushrooms to the skillet and sauté for 3 minutes, adding a little pasta water to deglaze the pan.

Once the pasta is cooked, please remove it from the water and add it to the skillet using a spaghetti spoon or tongs.

Mix the pasta with olive oil, garlic, and mushroom mixture, and season with salt and black pepper to taste.

Remove from the heat and serve warm with Parmigiano- Reggiano cheese sprinkled on top.
