Wishing you could have dessert for breakfast? With these Red Velvet Waffles, you can. These are no ordinary red velvet waffles. Instead, these gluten-free waffles are much lower in sugar than waffles made with traditional sweeteners. The red velvet waffles are made with rice flour, almond flour, coconut flour, and sugar-free sweetener, which brings the sugar count to 8 grams making this dish an excellent choice for people with diabetes. The waffles are also topped with sugar-free whipped cream, so the only thing you need to complete the word is a drizzle of sugar-free maple syrup.

What does a red velvet waffle taste like?

Red velvet waffles taste like a lighter version of red velvet cake. You can expect a rich buttery vanilla flavor with a subtle chocolate flavor.

Ingredients

Red Velvet Waffles


  • 1 cup Rice Flour



  • 3/4 cups Almond Flour 



  • 1/4 cup Coconut Flour



  • 4 tablespoons Sugar-Free Sweetener



  • 1 tablespoon Unsweetened Cocoa Powder



  • 4 teaspoons Baking Powder



  • 1/4 teaspoon Salt



  • 1/2 tsp Xanthan Gum

  • 2 large Eggs



  • 1 1/2 cups Almond Milk



  • 1/3 cup Butter, melted, cooled

  • 2 teaspoons Vanilla Extract

  • 1/2 teaspoon Apple Cider Vinegar

  • 1 tablespoon Red Food Coloring

  • Non-Stick Cooking Spray

Whipped Cream
  • 1/2 cup of Heavy Whipping Cream 

     

  • 1/4 cup Powdered Sugar Substitute 

     

  • 1 teaspoon Vanilla Extract 

Instructions

Red Velvet Waffles

Preheat your waffle iron. 

 

Pre heating waffle maker

Whisk the rice flour, almond flour, coconut flour, sugar-free sweetener, unsweetened cocoa powder, baking powder, xanthan gum, and salt until combined. 

 

Prepare dry ingredients

Whisk the eggs, almond milk, melted butter, vanilla extract, apple cider vinegar, and red food coloring in a separate bowl until combined.

Add the egg mixture to the dry almond flour mixture and mix just until combined.

Spray the waffle iron with nonstick cooking spray, then add 1/3-1/2 cup of the red velvet waffle batter to the waffle iron.

Cook the red waffle according to the manufacturer's instructions. Place the red velvet waffle onto a plate and continue cooking the red velvet waffles until there is no more batter left.

Whipped Cream

Place the heavy cream into a medium bowl and whip it on low using a hand mixer.

Add the vanilla extract and the powdered sugar substitute and beat it until it reaches the soft peak stage.

Divide the red velvet waffles between 4 plates and top with a dollop of whipped cream and keto maple syrup if desired.
