Pineapple Shrimp Fried Rice is a comforting and flavorful side dish or made into an entrée. It contains the wonderful aromas of sesame oil, garlic and ginger matched with the sweetness found in pineapple and shrimp, it's all fried and tossed together with savory soy sauce. If you want fried rice without all the carbs try using cauliflower rice  or make a healthier version using brown rice. Don't forget to make your rice the day before as this will help give you're fried rice nice and crispy texture.  

What does Shrimp Fried Rice contain?

This shrimp fried rice contains long grain rice that was cooked and cooled from the day before, ginger, garlic, bell peppers, shrimp, pineapple, eggs, soy sauce and cilantro.

What is the secret to great Shrimp fried rice?

The secret to a great fried rice is to use rice that was cooked a day or two before, this allows the rice to dry out making it crispy once it's fried. Another key to making great fried rice is you use fresh ingredients.   

What goes with Shrimp Fried Rice?

Any vegetable side dish such as steamed vegetables or Broccoli with Garlic Sauce. It will also go well with a side of Beef and Broccoli  or soy glazed ribs

What is the best oil for Shrimp fried rice?

Sesame, coconut and peanut oils create wonderful flavors and aromas when added to fried rice. In case of any allergies you can also use a neutral oil such as vegetable oil or grape seed oil.

Instructions

Place a large pan or wok onto the stovetop onto high heat, add the sesame oil to heat up for 1 minute.

Stir in the garlic, ginger and peppers, sauté for 30 seconds.

Push the vegetables to one side, adding in the cooked rice to fry for 2 minutes, flipping the rice over every 30 seconds.

Mix the rice with the vegetables.

Push the rice to one side, add the shrimp and pineapple to the pan, sauté for 2 minutes.

Add the eggs to a small bowl whisking them together.

Pour the eggs into the pan, mixing to cook.

Mix the eggs with the rice while adding in the soy sauce.

Stir well to combine adding in the chopped cilantro in with the rice last minutes before serving into bowls.
