Pickle Salad has a different burst of flavor in every tasty bite. Simple to make using shell pasta, red onion, pickles, and pickle juice for an extra sour kick tossed with fresh dill, Greek yogurt, salt, and pepper, it's as easy as that. Best of all, it will last three days in the fridge, so you can easily pack it up, take it for lunch, or have it as a side for dinner with Ribs or Spicy Chicken.

Ingredients

For Salad:
  • 1/2 pound Dry Shell Pasta

  • 2 tablespoons Dill Pickle Juice

  • 3/4 cup Dill Pickles, sliced

  • 3/4 cup Cheddar Cheese, small dice

  • 1/2 medium Red Onion, small dice

     

  • 2 tablespoons Fresh Dill

For Dressing:
  • 1 cup plain Greek Yogurt

  • 3 tablespoons Pickle Juice

  • 1/4 teaspoon Black Pepper

  • Salt to taste

Instructions

For Salad:

Boil pasta according to package directions. Once ready, run under cold water to stop the cooking process.

Place cooked pasta in a large bowl. Add the first 2 tablespoons of pickle juice, toss well letting it sit and absorb for 5 minutes.

Add pickles, cheddar cheese, red onion, and fresh dill, mixing well.

For Dressing:

To a small bowl, add Greek yogurt, pickle juice, black pepper and salt. Mix well.

For Assembly:

Combine the salad ingredients with the dressing. Place the pickle salad into the fridge for one hour to chill before adding it to a serving bowl ready to eat.
