Instructions

Fill a large pot ⅔ the way with water then place on high heat and bring to a boil.

Cut up the cauliflower, place the florets into a food processor, and pulse until it finely ground grain-like texture. You can also use a box grater or knife and mince to the same texture.

Once the water is boiling, place the cauliflower grains into a fine-mesh sieve or steam basket and steam over the boiling water for 5 minutes until the cauliflower is tender.

While the cauliflower is steaming, prepare a baking sheet with a cheesecloth or a clean towel on top.

Remove the steamed cauliflower grains from the steam and spread them out on the towel, and allow them to cool.

While the cauliflower is cooling, preheat the oven, place a rack in the middle and prepare the baking sheet or pizza pan for the crust.

When the cauliflower is cool to the touch, roll it up into the towel, and squeeze out as much water as you can.

Place the cauliflower into a large bowl with the remaining ingredients until everything is thoroughly combined.

Transfer the crust mixture to the prepared baking sheet or pizza pan and place it in the center of the sheet; then begin to press the mixture out to the edges to create your pizza crust.

Once your pizza crust shape is ready, place it into the oven and bake for 10-15 minutes or until golden brown.

Remove from the oven, and now add your tomato sauce and toppings. Return to the oven or under a broiler and bake for 3 minutes or until the cheese is melted and golden, then remove from the oven, slice, and serve warm.
