As with most amazing foods, the exact origin of falafel is unknown. Some claim the Egyptians came up with falafel, while others claim the Middle East or India invented falafel. Even though we do not know the original inventor, we are grateful to the falafel gods for giving us this delicious food. Falafel has a rich, savory herby flavor due to many herbs and spices like parsley, mint, and coriander.
Instead of serving falafel by themselves, we put them on pizza! We used whole wheat pizza dough to make this vegan recipe even healthier. Then we smeared it with vegan béchamel sauce, onions, green bell peppers, tomatoes, vegan mozzarella cheese, and fresh dill.
Ingredients
1/4 cup freshly chopped parsley leaves
1/4 cup freshly chopped mint leaves
1/2 cup walnuts
1 15 ounces can chickpeas, drained, rinsed
1 small red onion, minced
3 garlic cloves, minced
2 tablespoons whole wheat flour
1 teaspoon baking powder
1 teaspoon ground flaxseeds
1 teaspoon apple cider vinegar
1 teaspoon olive oil
1 teaspoon coriander
1 teaspoon cumin
1/2 teaspoon salt
1 teaspoon black pepper
1 store-bought whole-wheat pizza dough
1/2 cup vegan béchamel sauce
1 small red onion thinly sliced
1 small white onion, sliced
1 large tomato, thinly sliced
1/2 green bell pepper, thinly sliced
1 1/2 cups vegan mozzarella cheese
2 tablespoons freshly chopped dill
