As with most amazing foods, the exact origin of falafel is unknown. Some claim the Egyptians came up with falafel, while others claim the Middle East or India invented falafel. Even though we do not know the original inventor, we are grateful to the falafel gods for giving us this delicious food. Falafel has a rich, savory herby flavor due to many herbs and spices like parsley, mint, and coriander.

Instead of serving falafel by themselves, we put them on pizza! We used whole wheat pizza dough to make this vegan recipe even healthier. Then we smeared it with vegan béchamel sauce, onions, green bell peppers, tomatoes, vegan mozzarella cheese, and fresh dill.

Instructions

Falafel

Preheat oven to 350 °F. Line a baking sheet with parchment paper.

To a food processor, add parsley and mint and blend for 30 seconds. Add walnuts and pulse until the mixture is well combined.

Add the remaining falafel ingredients and pulse for 1 minute, scraping the sides of the food processor's bowl with a rubber spatula to make sure everything is incorporated.

Use a 3 tablespoon cookie scoop to scoop the mixture into 18 balls and place them onto the prepared baking sheet.

Bake the falafel for 10 minutes, then turn them over using a pair of tongs and bake them for an additional 10-15 minutes until golden.

Pizza

Increase the oven's temperature to 450 °F and place a pizza stone on the center rack.

Remove the whole wheat pizza from its packaging. Roll it into a large 10-12-inch circle using a rolling pin. The pizza should be the same size as your pizza stone.

Place the whole wheat pizza dough onto a pizza peel dusted with cornmeal. Cover the pizza dough with a clean damp kitchen towel and let it rest for 15 minutes.

Poke the pizza dough with a fork several times and spread the vegan béchamel sauce onto the whole wheat dough.

Put the tomatoes on top of the pizza, then place 6-8 falafel about 1-inch from the edge of the pizza dough.

Add the vegan mozzarella cheese and top with the red and white onions and green bell peppers.

Slide the falafel pizza onto the pizza stone and bake it for 10-15 minutes until golden and the cheese melts.

Garnish the falafel pizza with dill before slicing into 6-8 slices before digging in and enjoying.
