Simply so addictive and extremely fast to make, loaded with protein to keep you in Ketosis. The recipe contains a pork-based sausage as well as bacon. Feel free to substitute turkey sausage and bacon or plant-based to vegetarian. 

Enjoy these Keto Sausages Balls as a snack, appetizer, breakfast side, or added to your dinner plate with a side of broccoli. Then, all you have to do is get rolling. 

Tips: Check the Ingredients of the Italian Sausage to make sure no Breadcrumbs were used as binders. Shredding your own cheese assures that no added starch into the cheese.

Ingredients

  • 4 Italian Sausage Links, casing removed. 

  • 6 slices, Sugar Free Smoked Bacon

  • 1 cup Keto Cheddar Cheese, (Shred your own cheese)

  • 3 Fresh Chives, chopped 

Instructions

Pre-heat oven to 375 °F.

Using a cutting board, cut the bacon into medium dice. 

Place nonstick medium-sized pan onto the stove top on medium heat, once the pan is heated add the bacon & cook until crispy. Transfer to a plate lined with paper towel to drain the fat and cool the bacon down. 

Using a medium-sized bowl, add the sausage, bacon, cheddar & chives, reserving 1/4 cup of cheddar to top the sausage balls at the end. 

Mix the sausage mixture until well incorporated without over-mixing, resulting in tough sausage balls. 

Line a baking sheet with a silicone baking mat or a parchment paper. 

Start to scoop the sausage mixture using a 2-ounce portion scoop or tablespoon with work as well. Portioning all the mix onto the baking sheet. Roll each ball in using the palms of your hands to shape evenly. 

Place into the oven for 12 minutes rotating halfway through the cooking time. 

Remove tray from the oven & top with remaining cheddar cheese, place back into the oven for 1 more minute until cheese is melted. 

Remove from oven & place onto a plate to enjoy! These will last in the fridge for 3 days & can be frozen for up to 3 months.
