Ingredients

  • 8 ounces Penne Pasta

  • 1 pound Chicken breast, cut into 1-inch strips

  • 2 tablespoons Jerk seasoning paste

  • 1 1/2 teaspoons Kosher Salt

  • 3/4 teaspoon Black pepper

  • 2 tablespoons Olive oil

  • 1 medium Red Bell pepper, cut into 1-inch strips

  • 1 medium Yellow Bell pepper, cut into 1-inch strips

  • 1 medium Green Bell pepper, cut into 1-inch strips

  • 1 medium White Onion, cut into 1-inch strips

  • 1/2 cup Heavy Cream

  • 3/4 cup grated Parmesan Cheese

  • 1 teaspoon fresh Lemon Juice

Instructions

Put the penne pasta in a pot of salted boiling water. Cook the penne pasta using the package instructions until al dente.

Reserve 1/2 cup of the penne pasta water, then drain the penne pasta in a colander.

Next, place the chicken in a large bowl. Add 1 1/2 tablespoons of jerk seasoning paste, 1 teaspoon of kosher salt, and 1/2 teaspoon of black pepper. Toss to coat it in the seasoning.

Place the olive oil in a large deep skillet and set it over medium-high heat.

Add the chicken to the skillet. Cook for 2–3 minutes. Stir the chicken, then cook for another 2–3 minutes until cooked through. Place the chicken on a plate. Set aside.

Next, add the red, yellow, and green bell peppers and onions to the skillet. Cook for 2 minutes.

Stir in heavy cream, pasta water, the remaining jerk seasoning, kosher salt, and black pepper until combined. Cook for 3–4 minutes until the bell peppers and onions soften.

Place the chicken back into the skillet along with the Parmesan cheese, lemon juice, and penne pasta. Stir until combined and cook for another 1–2 minutes until everything is heated through.
