How to make Curried Cabbage

There are no limits to what can be flavored with the delicious blend of spices for anyone who loves curry. This recipe for Curried Cabbage is a perfect example of a quick and easy curried vegetable dish. Full of flavor from the fresh herbs and seasonings mixed with the curry spices to highlight the versatile taste of Cabbage. This dish is excellent as a vegetable side dish or on its own with any of your favorite roti or a bowl of warm steamed rice.

Ingredients

  • 2 heads Cabbage - sliced

  • 1 medium Onion - diced

  • 3 cloves Garlic - minced

  • 1 teaspoon Ginger - minced

  • 2 medium Carrots - diced

  • 2 stalks Celery - chopped

  • 15 oz Can Tomatoes - diced

  • 1 tablespoon Coconut oil

  • 1 tablespoon Ghee

  • 2 tablespoons Curry Powder

  • 1 tablespoon Amchar or Garam (hot) Masala powder

     

  • Salt To taste

  • Water for cooking

Instructions

Using a large pot or deep skillet, add the oil and ghee and bring to medium-high heat.

Once the oil is hot, add the onion, garlic, ginger, and celery and sauté for 3 minutes, stirring with a wooden spoon.

Add the carrots, canned tomatoes, curry, and masala powders and cook for another 3 minutes.

Mix in the cabbage, making sure to incorporate it with the other ingredients thoroughly; add a bit of water to help create a little gravy within the mixture and cook for 10-15 minutes.

Once the cabbage is tender, remove from the heat and serve warm with roti or over rice.
