Ricotta cheese is a smooth, thick, and creamy mild-tasting cheese that is famous for being stuffed into extra-large pasta shells or used as a sweet cream for cannoli. Its mild flavor and light texture make it an excellent cheese to complement a tangy tomato sauce. This recipe will show you how to make Chicken Ricotta for a nice Italian meal with friends and family. The dish has moist marinated chicken breast, a rich tangy but light tomato sauce, and mounds of melted cheese to create a meal of flavor decadence. This is also a quick and easy meal that pairs well with pasta like Penne Pasta Salad, grilled vegetables, or a fresh salad.

Ingredients

  • 6 boneless, skinless  Chicken Breasts - cut into halves

  • 2 tablespoons Green seasoning

  • 2 tablespoons Italian seasoning

  • 1 cups Ricotta Cheese

  • 1cup Mozzarella Cheese - finely grated

  • 1/4 cup Parmesan Cheese - finely grated

  • 3 tablespoons Extra Virgin Olive Oil

  • 1 medium Onion - diced

  • 1 tablespoon Basil - chopped

  • 1x15 ounces can Tomatoes - diced or crushed

  • Salt & Black Pepper to taste

Instructions

Season chicken with green and Italian seasoning and let marinate in a container for at least 1 hour or overnight for a richer flavor.

In a bowl, mix the ricotta, mozzarella, and Parmesan cheese until thoroughly combined and thick, creamy consistency.

Preheat the oven, place a rack in the middle of the range and prepare a baking dish by greasing with oil or nonstick cooking spray.

Using a large deep skillet, place on medium-high heat and add the oil.

Once the oil is hot, add the onion, garlic, and basil, then sauté for 3 minutes.

Add the chicken with the marinade and cook for 5 minutes.

Mix in the tomatoes and cook for 3 minutes.

Remove the pan from the heat, place the chicken and tomato mixture into the baking dish, and place dollops of the cheese mixture on top of each piece of chicken.

Bake in the oven for 15-20 minutes or until the cheese becomes golden, remove from the oven, and serve warm with your choice of sides.
