Ingredients

  • 1/2 lb. box small Elbow Macaroni 

     

  • 1 cup Ham, diced

     

  • 4 oz. mild Cheddar Cheese, cubed

     

  • 4 oz. Pineapple, cut into chunks

     

  • 1/4 cup Green Onions, diced 

     

  • 1 1/2 cups Fat-Free Mayonnaise

     

  • 1 tablespoon Sugar-Free Sweetener

     

  • Juice of 1 Lemon

  • 1 teaspoon Salt

     

  • 1/2 teaspoon Black Pepper

  • 1 teaspoon Garlic Powder 

  • 1/2 teaspoon Onion Powder 

     

  • 1/4 teaspoon Smoked Paprika

Instructions

Cook the elbow macaroni pasta using the package directions in a salted pot of boiling water. Drain the pasta in a colander, rinse it with cold water, and set it aside.

Place the ham, cheddar cheese, pineapple, and green onions into a large bowl, mix to combine, and set it aside.

 

Preparing other ingredients

Whisk the mayonnaise, sugar-free sweetener, lemon juice, salt, black pepper, garlic and onion powder, and smoked paprika in a small bowl.

Add the cooked pasta to the bowl with the ham and the mayonnaise mixture and toss to combine.
