In contrast, one serving of these Eggo buttermilk waffles includes 14 grams of carbs. That's because these waffles are made with almond flour, coconut flour, and xanthan gum. Ingredients

  •  

    1 cup Rice Flour 

  • 3/4 cups Almond Flour 

  • 1/4 cup Coconut Flour 

  • 1 teaspoon Xanthan Gum

  • 3 tablespoons Sugar-Free Sweetener

  • 2 teaspoons Baking Powder

  • 1 teaspoon Baking Soda

  • 1/4 teaspoon Salt

  • 2 cups Buttermilk

  • 1/3 cup Melted Butter

  • 2 large Eggs lightly beaten

  • 2 teaspoons Pure Vanilla Extract

Instructions

Preheat the waffle iron. 

 

Heating waffle maker

Whisk the rice flour, almond flour, coconut flour, xanthan gum, sugar-free sweetener, baking powder, baking soda, and salt in a large bowl. 
 

Mixing dry ingredients

Whisk the buttermilk, butter, eggs, and vanilla extract in a separate bowl. 
 

Mixing wet ingredients

Add the wet ingredients to the almond flour mixture and stir until combined. Do not overmix the Eggo buttermilk waffle batter; a few lumps are ok. 
 

Mixing wet to dry ingredients

Pour 1/3-1/2 cup of the Eggo buttermilk waffle batter into the waffle maker, and cook until golden brown. Continue cooking the waffles until all the batter is gone. 

Cooking eggo buttermilk waffle

Serve the Eggo buttermilk waffles with bacon, syrup, eggs, or any other breakfast staples you desire.
