Eggo Buttermilk Waffles are simply delicious and so addicting. However, they are often loaded with carbs which are not necessarily the best for your diet, especially if you eat waffles regularly. Luckily, you can still fill your craving for waffles by making these healthier Eggo buttermilk waffles. One serving of Eggo buttermilk waffles contains 28 grams of carbs. In contrast, one serving of these Eggo buttermilk waffles includes 14 grams of carbs. That's because these waffles are made with almond flour, coconut flour, and xanthan gum. So you can still enjoy these waffles with less than half the carbs. Serve these waffles with Keto Air Fryer Turkey Bacon, eggs, or your favorite breakfast foods. 

 

What is the difference between Eggo Homestyle and buttermilk waffles?

Besides the buttermilk, there is no considerable difference between the home style and buttermilk waffles. However, the buttermilk gives the buttermilk waffles a slightly tangy flavor.

These Eggo waffles are made with almond flour, coconut flour, xanthan gum, baking powder, baking soda, sugar-free sweetener, salt, eggs, buttermilk, melted butter, and vanilla extract.

Can you microwave Eggo waffles?

Yes, you can cook Eggo waffles in the microwave. However, the waffles may be slightly soggy since they were not cooked in a toaster oven. To heat Eggo waffles in the microwave, place a waffle onto a plate and heat it for 30 seconds. Then, turn the waffle over and heat it for an additional 30 seconds.

Ingredients

  •  

    1 cup Rice Flour 



  • 3/4 cups Almond Flour 



  • 1/4 cup Coconut Flour 



  • 1 teaspoon Xanthan Gum



  • 3 tablespoons Sugar-Free Sweetener



  • 2 teaspoons Baking Powder

  • 1 teaspoon Baking Soda



  • 1/4 teaspoon Salt



  • 2 cups Buttermilk

  • 1/3 cup Melted Butter

  • 2 large Eggs lightly beaten

  • 2 teaspoons Pure Vanilla Extract

Instructions

Preheat the waffle iron. 



 

Heating waffle maker

Whisk the rice flour, almond flour, coconut flour, xanthan gum, sugar-free sweetener, baking powder, baking soda, and salt in a large bowl. 

 

Mixing dry ingredients

Whisk the buttermilk, butter, eggs, and vanilla extract in a separate bowl. 

 

Mixing wet ingredients

Add the wet ingredients to the almond flour mixture and stir until combined. Do not overmix the Eggo buttermilk waffle batter; a few lumps are ok. 

 

Mixing wet to dry ingredients

Pour 1/3-1/2 cup of the Eggo buttermilk waffle batter into the waffle maker, and cook until golden brown. Continue cooking the waffles until all the batter is gone. 

Cooking eggo buttermilk waffle

Serve the Eggo buttermilk waffles with bacon, syrup, eggs, or any other breakfast staples you desire.
