Ingredients

  • 1 tablespoon Vegetable Oil

  • 1 pound Beef Sausages

  • 1 medium White Onion, thinly sliced

  • 1 medium stalk Celery, diced

  • 2 cloves Garlic, minced

  • 1 tablespoon Curry Powder

  • 1 teaspoon Ground Turmeric

  • 2 large Russet Potatoes, diced

  • 1 1/2 tablespoons Tapioca Starch

  • 2 1/2 cups low-sodium Beef broth

  • 1 cup frozen Green Peas

  • 2 tablespoons Tamarind chutney

  • 1/2 teaspoon Kosher Salt

  • 2 tablespoons fresh Parsley, chopped

Instructions

Place the vegetable oil in a large deep skillet and set it over medium-high heat.

Prepare skillet for frying sausages

Add the beef sausages to the skillet and cook them for 4–5 minutes per side until golden brown.

Remove the sausages from the skillet and place them on a cutting board. Let them cool slightly before cutting them into 1-inch pieces.

Next, add the onions and celery to the skillet and cook them for 2–3 minutes until they soften.

Stir in the garlic, curry powder, and turmeric and cook it for 1 minute until fragrant.

Stir in the potatoes and cook them for 3 minutes.

Add the tapioca starch and cook it for 1 minute, stirring often.

Add the beef broth and cook it for 10 minutes until the potatoes are fork-tender and the curry thickens.

Add the green peas, tamarind chutney, kosher salt, and beef sausages and stir to combine. Cook it for 3–4 minutes until everything is heated through.

Divide the curried sausages between 4 serving bowls and garnish them with parsley.
