Ingredients

Coffee Cake:
  • 2 tablespoons Ground Flaxseeds

  • 6 tablespoons of Water

  • 2 cups Gluten-free All-Purpose Flour

  • 2 teaspoons Baking Powder

  • 1/4 teaspoon Fine Sea Salt

  • 1/2 cup Vegan Butter, softened

  • 3/4 cup Sugar-Free Sweetener

  • 1 teaspoon Pure Vanilla Extract

  • 3/4 cup Almond Milk

Cinnamon Swirl:
  • 1 tablespoon Ground Cinnamon

  • 1/2 cup Brown Sugar Substitute

Crumb Topping:
  • 3/4 cup Gluten-Free All-Purpose Flour

  • 1/2 cup Sugar-Free Sweetener

  • 2 teaspoons Ground Cinnamon

  • 5 tablespoons Vegan Butter

Glaze:
  • 1 1/2 cups Powdered Sugar substitute

  • 4 tablespoons Almond Milk

  • 1 teaspoon Pure Vanilla Extract

Instructions

Coffee Cake:

Preheat the oven to 350 °F. Coat a 9 by 13-inch pan with non-stick cooking spray.

Prepare baking pan

Combine the ground flaxseed meal and water in a small bowl until combined. Allow the flaxseed mixture to sit for 5 minutes until it thickens.

Whisk the gluten-free all-purpose flour, baking powder, and salt in a medium bowl until combined. Set it aside.

Place the vegan butter and sugar-free sweetener in a stand mixer. Beat it with a paddle attachment for 1 minute until it's light and fluffy.

Add the flaxseed mixture and vanilla extract and mix until combined.

Add 1/3 of the gluten-free flour mixture and mix until combined. Add half of the almond milk and mix until combined.

Add 1/3 of the gluten-free flour mixture and mix until combined. Add the remaining almond milk and mix until combined.

Add the remaining gluten-free flour mixture and mix until combined.

Add half of the coffee cake batter to the prepared pan. Spread it into an even layer, and set it aside.

Cinnamon Swirl:

Mix the cinnamon and sugar-free sweetener in a small bowl. Sprinkle it on top of the cake batter in the baking pan. Swirl it into the batter using a butter knife.

Pour the remaining coffee cake batter on top of the cinnamon swirl and spread it into an even layer.

Crumb Topping:

Whisk the gluten-free all-purpose flour, sugar-free sweetener, and cinnamon in a medium bowl until combined.

Add the vegan butter and cut it into the gluten-free flour mixture until it resembles coarse crumbs.

Sprinkle the crumb topping over the coffee cake in an even layer and bake it for 40–45 minutes until a cake tester inserted into the cake comes out clean. Let the cake cool completely.

Glaze:

Mix the powdered sugar substitute, almond milk, and pure vanilla extract in a small bowl until combined.

Drizzle the glaze over the coffee cake. Let it sit for 15 minutes until it sets. Cut the coffee cake into 12 slices and enjoy!
