Ingredients

  • 1 medium head of Cauliflower, cut into florets

  • 1 tablespoon Olive oil

  • 1 teaspoon Onion powder

  • 1 1/2 teaspoons Kosher Salt

  • 1 teaspoon Black pepper

  • 1 teaspoon Paprika

  • 1 teaspoon Garlic powder

  • 3/4 cup Mayonnaise

  • 1 tablespoon Yellow Mustard

  • 1 teaspoon Sugar-free sweetener

  • 2 tablespoons Dill pickles, diced small

  • 1 teaspoon Apple Cider vinegar

  • 1/4 cup White Onion, diced small

  • 1 small stalk of Celery, diced small

  • 3 Hard-boiled Eggs, diced

  • 2 tablespoons fresh Dill

Instructions

Preheat oven to 375 °F.
 

Prepare oven for baking

Place the cauliflower florets in a large bowl. Add olive oil, onion powder, 1 teaspoon of kosher salt, 1/2 teaspoon of black pepper, 1/2 teaspoon of paprika, and garlic powder. Toss to combine.

Prepare cauliflower  and add the seasonings

Put the cauliflower florets onto a baking sheet and spread them into an even layer. Roast the cauliflower florets in the oven for 30 minutes until fork tender.

Prepare seasoned cauliflower for roasting

Take the cauliflower florets out of the oven and set them aside.

Remove the cooked cauliflower in the oven

Place the mayonnaise, yellow mustard, sugar-free sweetener, dill pickles, apple cider vinegar, onions, celery, and the remaining kosher salt, black pepper, and paprika into a large bowl and whisk until combined.

Prepare the salad dressings

Add the cauliflower florets and hard-boiled eggs and toss gently to combine.

Toss the cauliflower and boiled eggs

Cover the cauliflower potato salad with plastic wrap and chill it in the fridge for at least 1 hour.

Chill the Cauliflower Potato Salad

Place the cauliflower salad in a serving bowl and garnish it with dill.
