Ingredients

  • 2 tablespoons Olive Oil

  • 1/2 small White Onion, diced small

  • 1 medium stalk of Celery, diced small

  • 1 medium Zucchini, diced

  • 3 cloves Garlic, minced

  • 1 teaspoon ground Turmeric

  • 1 cup White Rice

  • 1 3/4 cups boiling low-sodium Vegetable broth

  • 1 teaspoon Kosher Salt

  • 1/2 teaspoon Black pepper

  • 1/4 cup shredded Parmesan Cheese

  • 3 tablespoons fresh chopped Parsley

Instructions

Preheat the oven to 375 °F.

Prepare oven for baking

Place the olive oil in a large skillet and set it over medium-high heat.
