Air Fryer Zucchini with whole zucchini on Sides

Zucchini is a great vegetable side dish or snack full of vitamins, minerals, and antioxidants and high in fiber. With zucchini’s mildly sweet and bitter flavor, it’s no wonder it tastes so rich when well seasoned. This recipe for air fryer Zucchini is an easy fix for a quick vegetable dish that will complement any meal. We think this recipe might become a regular at your home; it’s so good!

Ingredients

  • 3 large Zucchini

  • 1 tablespoon Extra Virgin Olive Oil

  • ¼ teaspoon Salt

  • ¼ teaspoon Thyme - dried

  • ¼ teaspoon Garlic powder

  • ¼ teaspoon Rosemary - dried

  • ½ teaspoon Parsley - dried

  • ½ teaspoon Oregano - dried

  • ½ teaspoon Basil - Dried

Optional Ingredients
  • ¼ teaspoon Red Pepper Flakes

  • 1 teaspoon Parmesan Cheese

Instructions

Preheat air fryer, to 400 °C.

Cut the zucchini into rounds ¼ inch thick and coat with the oil and seasonings in a bowl.

Place them into the air fryer, cook for 10-15 minutes, then toss and repeat for another 10-15 minutes or until golden and crunchy.

Serve warm as a snack or side dish with your meal like the Air Fryer Flank Steak.
