This vegan vanilla ice cream uses coconut milk and coconut cream to give a coconut flavor and create a rich, creamy texture. We also added vanilla sugar and vanilla bean paste, so you get a double dose of vanilla flavor in every bite of ice cream. This vegan vanilla ice cream calls for xanthan gum. It gives the ice cream a super creamy texture that will fool even the most enthusiastic dairy lovers into thinking they are eating regular vanilla ice cream. However, xanthan gum is an optional ingredient, so you can leave it out if you want to.

Place your Ice Cream Machine churning bowl in the freezer 24 hours in advance.
Place coconut milk, coconut cream, almond butter, agave nectar, vanilla sugar, vanilla bean paste, and xanthan gum in a high-speed blender.  
Blend the ice cream mixture for a minute until smooth and creamy.
Pour into a liquid measuring cup, cover with plastic wrap, and chill for 3-4 hours or overnight.
Pour the vanilla ice cream mixture into an ice cream maker and churn it using the manufacturer's directions until it has the texture of soft serve. The ice cream usually takes 20-30 minutes to reach the soft-serve stage. 
Place vanilla ice cream into a large airtight freezer-safe container and freeze for 2-3 hours until it is firm.
To serve, remove the vanilla ice cream from the freezer and let it sit for 10-15 minutes until it softens slightly.   
Scoop the vanilla ice cream into bowls and serve.
