Ingredients

For Soba Noodles:
  • 6 ounces Soba Noodles

  • 2 tablespoons Olive Oil

  • 8 ounces Sugar Snap Peas, sliced 

  • 1 medium Red Bell Pepper, sliced

  • Fresh Herbs for garnish (Optional)

  • Lemon or Lime slices for garnish (Optional)

For Ginger Sesame Sauce:
  • 1/4 cup Low Sodium Soy Sauce

  • 2 tablespoons Olive Oil

  • Juice of One Lime

  • 1 tablespoon Sesame Oil

  • 1 tablespoon Maple Syrup

  • 1 tablespoon Fresh Ginger, grated

  • 1 teaspoon Sriracha

Instructions

Soba Noodles Preparation:

In a large pot of boiling water, add soba noodles. Cook for about 5 minutes until al dente, then drain using a pasta strainer.

In a skillet over medium-high heat, add olive oil. Once hot, add red bell peppers and sugar snap peas. Sauté for about 5 minutes, stirring frequently.

Ginger Sesame Sauce Preparation:

Place the ingredients for the Ginger Sesame Sauce in a bowl. Mix well using a whisk.

Place the soba noodles, sugar snap peas, and red bell peppers in a bowl. Add Ginger Sesame Sauce mixing well. 

Plate the noodles and vegetables. Garnish with fresh herbs and lemon/lime slices.
