Cheddar cheese is a pungent flavor that is so darn delicious. Guided by this flavorful inspiration, we set out to recreate this excellent cheese vegan style. We used a base of cashews, but we also added red bell peppers, smoked paprika, and cayenne pepper to help create its characteristic yellow-orange color. We even added caramelized onions to the Vegan Cheddar Cheese to give it a rich, sweet, buttery flavor.

1 tablespoon Vegan Butter
2 Large Onions, finely sliced
6-7 tablespoons Water
1 cup raw Cashews
1 1/3 cups Water
5 tablespoons Fresh Lemon Juice
2 tablespoons Grape Seed Oil
1/4 cup Tahini
1 tablespoon Coconut Aminos
1 tablespoon Tomato Paste
2 teaspoons White Wine Vinegar
1 medium Red Bell Pepper, seeds removed, chopped
1 medium White Onion, chopped
2 cloves Garlic, chopped
2 teaspoons Salt
1/2 teaspoon Smoked Paprika
1/8 teaspoon Cayenne Pepper
1 tablespoon Dijon Mustard
1/4 cup Nutritional Yeast
1 tablespoon Agar-Agar Powder
