Ingredients

For the Scones:
  • 2 cups All-Purpose Flour (plus 1 tablespoon for rolling dough)

  • 1 tablespoon Baking Powder

  • 1 tablespoon Ground Flaxseeds

  • 1/2 teaspoon Salt

  • 1/4 cup Sugar

  • 1/2 cup Coconut Oil

  • 3/4 cup Unsweetened Soy Milk

  • 3/4 cup Fresh Blueberries

For the Glaze (Optional):
  • 1/2 cup Powdered Sugar

  • 1/2 tablespoon Unsweetened Soy Milk

Instructions

Scones Preparation:

Preheat oven to 400 °F. Line large stainless steel baking sheet with parchment paper.

In a large mixing bowl, add 2 cups all-purpose flour, baking powder, ground flaxseeds, salt, and sugar. Using a whisk, whisk well.

Add coconut oil to the flour mixture, cutting it with a pastry cutter until it becomes like coarse crumbs.

Add soy milk and mix until combined.

Add blueberries, folding them into the mixture.

Spread one tablespoon of all-purpose flour on a flat surface.

Place the dough on your floured surface, and knead a few times.

Using your hands, flatten the dough into a one-inch circle.

Using a pizza cutter, cut the dough into 8 even wedges.

Prepare a baking sheet and place the wedges, and bake for 25 minutes.

Glaze Preparation:

In a small mixing bowl, add powdered sugar and soy milk. Using a whisk, whisk until smooth.

Allow scones to cool for 15 minutes, then drizzle with glaze.

Let scones sit for 15 minutes until glaze sets. Serve with a cup of coffee or herbal tea.
