Sometimes you want noodle soup, even though you're on a keto diet. And this Simple Kelp Noodles Soup soothes that itch. Kelp noodles are a great low-carb alternative to wheat noodles. They are made from kelp, a sea vegetable. Besides being low in carbs, kelp is nutrient-rich. It's packed with Vitamin K1, magnesium, and calcium, essential for bone health. It's even rich in folate, which is vital for cell division. But nutrition aside, this soup is quite delicious. Unlike wheat noodles, kelp noodles are nice and chewy - no soggy noodles here. And the noodles are cooked in beef broth for a savory meatiness. Jalapeño peppers and Sriracha give some kick, while the coconut aminos add some umami. We're also adding some toasted sesame oil and sesame seeds for an Asian flare. Add some cooked shrimp, beef, pork, or a simple fried egg to make it a meal.
