Ingredients

Italian Dressing:
  • 3/4 cup Olive Oil

  • 1/4 cup White Wine Vinegar

  • 1 teaspoon Garlic powder

  • 1 teaspoon dried Oregano

  • 1/2 teaspoon Onion powder

  • 1/2 teaspoon crushed Red Pepper flakes

  • 1 teaspoon dried Dill

  • 1 teaspoon Kosher Salt

  • 1/2 teaspoon Black Pepper

  • Juice of 1 Lemon

  • Zest of 1 Lemon

Seafood Pasta Salad:
  • 8 oz. Multicolored Pasta

  • 2 tablespoons Mayonnaise

  • 1 stalk Celery, sliced thinly

  • 1/3 cup sliced Black Olives

  • 1 medium English Cucumber, cut in half lengthwise and sliced into half moons

  • 1 cup imitation crab meat, torn into bite-size pieces

  • 1 cup of cooked Shrimp, chopped

  • 2 tablespoons of fresh Parsley, chopped

Instructions

Italian Dressing:

Place the Italian dressing ingredients into a mason jar, cover it, and shake until combined. Place the Italian dressing in the fridge and let it sit for 1–2 hours before making the seafood pasta salad.

Seafood Pasta Salad:

Cook the pasta using the package instructions in a pot of salted boiling water until al dente.

Drain the pasta in a colander and rinse it with cold water, then place it in a large bowl.

Remove the Italian dressing from the fridge, shake it until well combined, then pour half of it over the pasta. Gently toss to combine.

Add the mayonnaise, celery, black olives, English cucumber, imitation crab meat, and shrimp and toss to combine and the remaining Italian dressing and toss to combine.

Cover the seafood pasta salad with plastic wrap and let it sit in the fridge for at least 30 minutes.

Remove the seafood pasta salad from the fridge, place it in a serving bowl, and garnish with parsley.
