A Rueben sandwich is a hot sandwich consisting of salty corned beef, tangy sauerkraut, Swiss cheese, and Russian dressing served on rye bread. There's no doubt that Reuben sandwiches are delicious, but why make a Reuben sandwich when you can make a Reuben dip in the slow cooker. First, we combined classic Reuben ingredients such as corned beef and Swiss cheese sauerkraut. Next, we added mayonnaise, sour cream, ketchup, horseradish, milk, garlic, shallot (the ingredients for Russian dressing), and cream cheese, then cooked it in the slow cooker. In a few hours, you will end up with a rich, creamy, delicious dish that perfectly captures the flavor of a Reuben sandwich. Don't forget to serve the Reuben Dip with crispy rye crackers!

 

What kind of crackers go with Reuben Dip?

Rye crackers go best with Reuben dip since a Reuben sandwich is served on rye bread. However, you can also serve Reuben dip with regular crackers, bagel chips, or any crackers you desire. 

 

Can Reuben Dip be frozen?

Of course, you can freeze Reuben dip. Place the Reuben dip into an airtight container and freeze it for up to a month. Then, thaw the Reuben dip in the fridge overnight before reheating. 

 

How do you store leftover corned beef?

Place the corned beef into shallow airtight containers. Alternatively, you can wrap the corned meat tightly with plastic wrap. The corned beef will last for 3-4 days stored in the refrigerator. 

 

How long does corned beef last in the freezer?

Uncooked corned beef will last in the freezer for 1 month. Cooked corned beef will stay in the freezer for 2-3 months.

Ingredients

  • 1 8 oz. package Cream Cheese, softened

     

  • 1/3 cup Mayonnaise

     

  • 1/3 cup Sour Cream

     

  • 1/4 cup Ketchup 

     

  • 1 tablespoon prepared Horseradish 

     

  • 1 tablespoon Whole Milk 

     

  • 2 cloves Garlic, grated 

     

  • 1 Shallot, grated 

     

  • 1/2 teaspoon Coconut Aminos 

     

  • 1 14.5 oz. can Sauerkraut

     

  • 1/2 lb. thinly sliced Deli Corned Beef, diced 

     

  • 1 1/2 cups shredded Swiss Cheese

     

  • Nonstick Cooking Spray

     

  • 3 cups Rye Crackers

Instructions

Place the cream cheese, mayonnaise, sour cream, ketchup, horseradish, whole milk, garlic, shallot, and coconut aminos into a medium bowl. Stir until combined. 



 

Place the sauerkraut into a clean kitchen towel and squeeze the excess moisture out of it.

 

Add the sauerkraut, corned beef, and Swiss cheese to the cream cheese mixture and stir until combined. 

 

Spray a crockpot insert with nonstick cooking spray, then add the Reuben dip to it. 

 

Place the lid on the crockpot and cook the Reuben dip on low for 1 hour and 15 minutes. 

 

Stir the Reuben dip and cook it for an additional 1 hour and 15 minutes. 

 

Transfer the Reuben dip to a serving bowl and serve it with the rye crackers.
